Ingredients

  • 2 cups shredded, cooked chicken
  • 1 cup sweet corn (fresh, frozen, or canned)
  • 1 cup halved cherry tomatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded sharp cheddar cheese
  • 1 cup chopped romaine lettuce
  • 1/2 cup thinly sliced red onion
  • 1/2 cup your favorite BBQ sauce
  • 1/4 cup creamy ranch dressing
  • Salt and black pepper to taste
  • 1 diced avocado (optional)
  • Tortilla chips for garnish (optional)

Instructions

  1. Place the shredded chicken in a large bowl.
  2. Add the corn, cherry tomatoes, black beans, cheddar cheese, romaine lettuce, and red onion to the bowl.
  3. Gently mix all the ingredients together until well combined.
  4. Pour the BBQ sauce over the mixture and fold it in carefully to ensure everything is evenly coated.
  5. Season with salt and pepper according to your preference.
  6. If you’re including avocado, add it now and stir gently to avoid mashing it.
  7. Serve the salad in individual bowls, drizzling ranch dressing on top.
  8. For an extra crunch, sprinkle tortilla chips over each serving.
