Ingredients
- 1 cup unsweetened shredded coconut
- 1 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional for coating)
Instructions
- In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined and a sticky dough forms.
- Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing the balls on a parchment-lined baking sheet.
- If using chocolate, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Dip each coconut ball into the melted chocolate, allowing excess chocolate to drip off, and return to the parchment-lined sheet.
- Place the baking sheet in the refrigerator for at least 30 minutes to allow the balls to firm up.
- Once set, enjoy your coconut bliss balls! Store any leftovers in an airtight container in the refrigerator.
Notes
- For a tropical twist, add 1/4 cup crushed pineapple to the mixture before rolling into balls.
