Coconut Bliss Balls are your perfect healthy treat, combining the goodness of coconut and almond flour for a delicious snack.


Ingredients

  • 1 cup unsweetened shredded coconut
  • 1 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional for coating)

Instructions

  1. In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until well combined and a sticky dough forms.
  2. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing the balls on a parchment-lined baking sheet.
  3. If using chocolate, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  4. Dip each coconut ball into the melted chocolate, allowing excess chocolate to drip off, and return to the parchment-lined sheet.
  5. Place the baking sheet in the refrigerator for at least 30 minutes to allow the balls to firm up.
  6. Once set, enjoy your coconut bliss balls! Store any leftovers in an airtight container in the refrigerator.

Notes

  • For a tropical twist, add 1/4 cup crushed pineapple to the mixture before rolling into balls.
