Description

A creamy and delicious Cottage Cheese Raspberry Mousse that is perfect for a light dessert.


Ingredients

  • 1 cup cottage cheese
  • 1 cup fresh raspberries (plus extra for garnish)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 1/4 cup heavy cream
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. In a blender or food processor, combine the cottage cheese, fresh raspberries, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until soft peaks form. If desired, add powdered sugar for sweetness.
  3. Gently fold the whipped cream into the raspberry-cottage cheese mixture until well combined. Be careful not to deflate the whipped cream.
  4. Spoon the mousse into serving dishes or cups and refrigerate for at least 1 hour to allow it to set.
  5. Before serving, top with additional fresh raspberries for garnish.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the blender with the other ingredients.
  • Substitute strawberries or blueberries for raspberries for a different flavor profile.
