Description
A creamy and delicious Cottage Cheese Raspberry Mousse that is perfect for a light dessert.
Ingredients
- 1 cup cottage cheese
- 1 cup fresh raspberries (plus extra for garnish)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1/4 cup heavy cream
- 1 tablespoon powdered sugar (optional)
Instructions
- In a blender or food processor, combine the cottage cheese, fresh raspberries, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth and creamy.
- In a separate bowl, whip the heavy cream until soft peaks form. If desired, add powdered sugar for sweetness.
- Gently fold the whipped cream into the raspberry-cottage cheese mixture until well combined. Be careful not to deflate the whipped cream.
- Spoon the mousse into serving dishes or cups and refrigerate for at least 1 hour to allow it to set.
- Before serving, top with additional fresh raspberries for garnish.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the blender with the other ingredients.
- Substitute strawberries or blueberries for raspberries for a different flavor profile.
