Ingredients

  • 1 ½ cups crushed digestive biscuits
  • ½ cup melted coconut oil
  • 2 cups mascarpone cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon almond extract
  • 1 cup chilled heavy cream
  • Seasonal berries or chocolate shavings (optional)

Instructions

  1. Mix the crushed digestive biscuits with the melted coconut oil in a medium bowl until well coated.
  2. Press the mixture into the base of a 9-inch round cake pan to create a solid crust and refrigerate for about 30 minutes.
  3. In a large bowl, blend the softened mascarpone cheese with an electric mixer until smooth.
