Ingredients
- 2 pounds carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh lemon juice (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the carrot sticks, olive oil, oregano, garlic powder, salt, and black pepper. Toss until the carrots are evenly coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through for even cooking.
- If desired, drizzle with fresh lemon juice before serving.
