Ingredients
- 2 cups pulled pork, cooked and shredded
- 1 bag (12 oz) tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup canned black beans, rinsed and drained
- 1 cup fresh pico de gallo
- 1/2 cup sour cream
- 1/4 cup sliced jalapeños (pickled or fresh)
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the pulled pork with olive oil, chili powder, cumin, salt, and pepper. Mix well to coat the pork evenly.
- On a large baking sheet, spread out the tortilla chips in an even layer.
- Evenly distribute the seasoned pulled pork over the tortilla chips.
- Sprinkle the black beans over the pulled pork, followed by the shredded cheddar and Monterey Jack cheeses.
- Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with pico de gallo, sour cream, jalapeños, and chopped cilantro.
- Serve immediately while hot and enjoy!
