Description
A delicious and healthy medley of roasted asparagus and carrots, perfect as a side dish.
Ingredients
- 2 cups fresh asparagus, trimmed and cut into 2-inch pieces
- 2 cups carrots, peeled and sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 1 tablespoon grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the asparagus and carrots.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, dried thyme, salt, and pepper. Toss until the vegetables are evenly coated.
- Spread the vegetable mixture in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through for even cooking.
- Remove from the oven and drizzle with lemon juice. If desired, sprinkle with grated Parmesan cheese before serving.
Notes
- For added flavor, try tossing in some chopped fresh herbs like parsley or basil before serving.
- Substitute the asparagus with green beans or zucchini for a different twist on this dish.
