Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon extra virgin olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 cup ripe peaches, chopped
- 1/4 cup diced jalapeños (remove seeds for milder taste)
- 1/4 cup pure honey
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1 tablespoon freshly squeezed lime juice
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together the olive oil, sea salt, black pepper, garlic powder, onion powder, and smoked paprika until well combined.
- Add the chicken thighs to the bowl and toss them thoroughly in the seasoning blend until they are fully coated.
- Transfer the seasoned chicken thighs into a suitable baking dish.
- In another bowl, combine the chopped peaches, jalapeños, honey, apple cider vinegar, soy sauce, and lime juice. Stir until well incorporated.
- Pour the peach mixture over the chicken in the baking dish, ensuring the chicken is generously covered.
- Place the dish in the oven and bake for about 25 to 30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
- After baking, take the dish out of the oven and allow it to rest for about 5 minutes.
- Sprinkle the chopped cilantro over the top before serving.
