Description

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 cup ripe peaches, chopped
  • 1/4 cup diced jalapeños (remove seeds for milder taste)
  • 1/4 cup pure honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the olive oil, sea salt, black pepper, garlic powder, onion powder, and smoked paprika until well combined.
  3. Add the chicken thighs to the bowl and toss them thoroughly in the seasoning blend until they are fully coated.
  4. Transfer the seasoned chicken thighs into a suitable baking dish.
  5. In another bowl, combine the chopped peaches, jalapeños, honey, apple cider vinegar, soy sauce, and lime juice. Stir until well incorporated.
  6. Pour the peach mixture over the chicken in the baking dish, ensuring the chicken is generously covered.
  7. Place the dish in the oven and bake for about 25 to 30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  8. After baking, take the dish out of the oven and allow it to rest for about 5 minutes.
  9. Sprinkle the chopped cilantro over the top before serving.
