  • 1 cup Buttermilk or plant milk + vinegar for vegan
  • 0.5 cup Pickle Juice
  • 0.5 cup Melted Unsalted Butter or coconut oil for vegan
  • 1 large Egg
  • 1 cup Chopped Dill Pickles fresh and crisp
  • 1 cup Shredded Sharp Cheddar Cheese or alternative cheeses
  • 0.5 cup Chopped Green Onions
  • 0.25 cup Fresh Dill

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, garlic powder, cayenne pepper, and black pepper.
  3. In a separate bowl, mix the buttermilk, pickle juice, melted butter, and egg until well incorporated.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Fold in the chopped dill pickles, shredded cheddar, chopped green onions, and fresh dill.
  6. Using a spoon or cookie scoop, drop mounds of dough onto a lined baking sheet, spaced 2 inches apart.
  7. Bake for 15-20 minutes or until golden brown and firm to the touch.
