Step-by-Step Instructions
  1. Gather vibrant yellow dandelion petals, rinsing gently under cool water. Aim for about four cups and let dry.
  2. Place dandelion petals in a pot and cover with four cups of water. Steep for 3 to 24 hours.
  3. Strain the liquid into a clean pot, discarding petals. Add lemon juice and honey (or maple syrup), then mix in pectin.
  4. Bring the mixture to a rolling boil over medium-high heat, stirring constantly for about 10 minutes.
  5. Perform a cold plate test after boiling for 1 minute to check if the jelly is ready.
  6. Sterilize jars in boiling water for 10 minutes, then dry upside down on a towel.
  7. Fill the sterilized jars with jelly, leaving 1/4 inch headspace, seal tightly, and cool completely.
