Step-by-Step Instructions
  1. Preheat the oven to 500°F (260°C) and prepare Brussels sprouts on a baking sheet lined with parchment paper.
  2. Cover the baking sheet with aluminum foil and roast for 15 minutes. Remove foil, season with salt and pepper, and roast for another 10 minutes.
  3. Prepare the tahini dressing by mashing anchovy fillets and garlic together, then mix with tahini, lemon juice, mustard, and olive oil until creamy.
  4. Prepare the croutons by tearing bread, tossing with olive oil, salt, and pepper, then roast in the oven for about 5 minutes.
  5. Toss the roasted Brussels sprouts with the tahini dressing, then sprinkle with croutons and sunflower seeds before serving.
