Cooking Instructions
- Bring a large pot of water to a boil. Add Asian lo mein noodles and cook according to package instructions, 3-5 minutes. Drain and set aside.
- In a skillet, heat canola oil over medium-high heat. Add sliced pork and sauté for 5-7 minutes until browned. Transfer to a plate.
- In the same skillet, add minced ginger, garlic, and pepper. Stir-fry for about 1 minute until fragrant.
- Pour in chicken broth and remaining soy sauce. Bring to a gentle boil for 1 minute.
- Add chopped celery, snow peas, and coleslaw mix. Cook for 2-3 minutes until vegetables are crisp-tender.
- Add reserved noodles to the skillet, tossing with pork and vegetables. Cook for an additional couple of minutes.
- Remove from heat and serve, garnishing with sliced green onions and cilantro. Provide soy sauce on the side.
