  • 1 medium Onion yellow or white
  • 4 cups Butternut Squash diced
  • 2 cups Apples Granny Smith or Honeycrisp, diced
  • 1 teaspoon Ground Cinnamon adjust based on taste
  • 0.25 teaspoon Ground Nutmeg sparingly

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the breakfast sausage, cooking for 5-7 minutes until browned and cooked through. Remove and set aside.
  2. In the same skillet, add another tablespoon of olive oil if needed. Sauté finely chopped onion for about 3 minutes until translucent.
  3. Add diced butternut squash, stirring to coat in the onion mixture. Cook undisturbed for 5 minutes, then stir and continue cooking for another 5 minutes until golden and tender.
  4. Add diced apples, stirring into the squash mixture. Cook about 5 minutes until both have softened while maintaining their shapes.
  5. Sprinkle in ground cinnamon, nutmeg, salt, and pepper, stirring thoroughly. Cook for an additional minute.
  6. Return the sausage to the skillet, stirring to combine with the mixture. Cook for 2-3 minutes until heated through.
  7. Remove from heat, garnish with fresh parsley, and serve warm.
