For the Sauce
  • 2 Tbsp Olive Oil Use extra virgin for richer taste.
  • 1 cup Sun-Dried Tomatoes Packed in oil for enhanced flavor.
  • 2 cloves Garlic Finely minced.
  • 1/4 tsp Red Pepper Flakes Optional for heat.
  • 1 cup Half-and-Half or Heavy Cream Heavy cream yields a richer sauce.
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For the Freshness
  • 4 cups Fresh Baby Spinach Wilts beautifully in the sauce.
  • 1/2 cup Parmesan Cheese Grated, save some for garnish.
  • 1/4 cup Fresh Basil Fold in before serving.

Method
 

Cooking Instructions
  1. Boil water in a large pot. Add spaghetti and cook according to package instructions until al dente, approximately 8-10 minutes. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté sun-dried tomatoes for 2 minutes.
  3. Stir in minced garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  4. Lower heat, pour in half-and-half or heavy cream, simmer for 3-4 minutes until slightly thickened. Season with salt and black pepper.
  5. Fold in fresh spinach and cook for 2-3 minutes until wilted.
  6. Stir in Parmesan cheese until melted and smooth; adjust thickness with reserved pasta water if necessary.
  7. Combine spaghetti with the sauce in the skillet; toss to coat evenly.
  8. Remove from heat, fold in fresh basil, and serve immediately, garnished with extra Parmesan.
