Method
 

Step-by-Step Instructions
  1. Brown the sausage in a large pot over medium heat for about 5-7 minutes until fully cooked. Drain excess grease if necessary.
  2. Add chopped onion and minced garlic to the pot with the sausage and sauté for 3-4 minutes until the onion is translucent.
  3. Pour in the chicken broth, oregano, and basil. Season with salt and pepper to taste, then bring to a simmer.
  4. Stir in the heavy cream and broken lasagna noodles, cooking uncovered for 10-12 minutes until the noodles are tender.
  5. Add fresh spinach, ricotta, and half of both mozzarella and Parmesan cheese. Simmer for 2-3 minutes until greens wilt and cheese melts.
  6. Taste the soup and adjust seasoning if necessary. Stir in red pepper flakes for heat if desired.
  7. Ladle the soup into bowls, topping each with remaining mozzarella, Parmesan, and chopped parsley before serving.
