Step-by-Step Instructions
  1. In a large skillet over medium heat, brown the ground beef for about 6–8 minutes until no longer pink. Drain excess fat and set aside.
  2. In your crock pot, combine the browned ground beef with diced tomatoes, beef broth, and Italian seasoning. Stir well.
  3. Cover your slow cooker and set it to low heat, allowing the soup to cook for 4–6 hours.
  4. About 30 minutes before serving, stir in your choice of pasta. Cover the crock pot again.
  5. Once the pasta is cooked, stir in ricotta cheese and mozzarella cheese, allowing them to melt for about 5 minutes.
  6. Ladle the soup into bowls and garnish with additional mozzarella or fresh herbs.
