- In a large skillet over medium heat, brown the ground beef for about 6–8 minutes until no longer pink. Drain excess fat and set aside.
- In your crock pot, combine the browned ground beef with diced tomatoes, beef broth, and Italian seasoning. Stir well.
- Cover your slow cooker and set it to low heat, allowing the soup to cook for 4–6 hours.
- About 30 minutes before serving, stir in your choice of pasta. Cover the crock pot again.
- Once the pasta is cooked, stir in ricotta cheese and mozzarella cheese, allowing them to melt for about 5 minutes.
- Ladle the soup into bowls and garnish with additional mozzarella or fresh herbs.
