Cupcake Preparation
- Preheat your oven to 350°F (175°C) and line your cupcake tins with liners.
- In a medium bowl, whisk together cake flour, cocoa powder, baking powder, and salt.
- In a large bowl, combine granulated sugar and vegetable oil. Use an electric mixer to blend until smooth.
- Add eggs one at a time, mixing well after each. Pour in buttermilk and green food coloring, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
- Distribute the batter into cupcake tins, filling them two-thirds full. Bake for about 18 minutes until a toothpick comes out clean.
- Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack.
- Beat cream cheese and butter together until fluffy, then add powdered sugar and mint extract until desired consistency is reached.
- Once cooled, frost the cupcakes with cream cheese frosting using a piping bag or knife.
