Method
 

Cupcake Preparation
  1. Preheat your oven to 350°F (175°C) and line your cupcake tins with liners.
  2. In a medium bowl, whisk together cake flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, combine granulated sugar and vegetable oil. Use an electric mixer to blend until smooth.
  4. Add eggs one at a time, mixing well after each. Pour in buttermilk and green food coloring, mixing until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  6. Distribute the batter into cupcake tins, filling them two-thirds full. Bake for about 18 minutes until a toothpick comes out clean.
  7. Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack.
  8. Beat cream cheese and butter together until fluffy, then add powdered sugar and mint extract until desired consistency is reached.
