Cookie Preparation
- Beat softened unsalted butter until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract and green gel food coloring until well combined.
- Gradually add vanilla cake mix, folding until just combined. Cover bowl and refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Use a cookie scoop to portion dough into balls, rolling in granulated sugar and then in powdered sugar.
- Bake for 10-11 minutes until edges are set but centers are slightly underdone. Allow to cool on baking sheets for 5 minutes.
- Transfer to a wire rack to cool completely.
