  • 2 large Eggs Use room temperature for best results.
  • 1/2 cup Unsalted Butter Softened for easy blending.
  • 1 teaspoon Pure Vanilla Extract Almond extract can be substituted.
  • 1 tablespoon Green Gel Food Coloring Gel recommended to avoid runny dough.
  • 1/4 cup Granulated Sugar For rolling dough balls before powdered sugar.
  • 1 cup Powdered Sugar For coating cookies.

Method
 

Cookie Preparation
  1. Beat softened unsalted butter until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract and green gel food coloring until well combined.
  2. Gradually add vanilla cake mix, folding until just combined. Cover bowl and refrigerate for 30 minutes.
  3. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  4. Use a cookie scoop to portion dough into balls, rolling in granulated sugar and then in powdered sugar.
  5. Bake for 10-11 minutes until edges are set but centers are slightly underdone. Allow to cool on baking sheets for 5 minutes.
  6. Transfer to a wire rack to cool completely.
