  • 2 pounds boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. In a large bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, rosemary, thyme, salt, and black pepper until well combined.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  6. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
