Preparation
- Combine macadamia nuts, granulated sugar, and salt in a mixing bowl. Pour in melted butter and stir until cohesive. Press into serving cups for crust.
- In another bowl, whisk coconut pudding mix and milk until smooth. Mix in softened cream cheese and pineapple juice until creamy.
- Layer pudding over the crust in cups, followed by pineapple rings and another pudding layer. Repeat until nearly full, topping with whipped cream.
- Cover with plastic wrap. Refrigerate for at least 2 hours to set.
- Remove from fridge and garnish with chopped nuts and toasted coconut. Optionally, add extra pineapple rings on top.
