  • 1/2 teaspoon cinnamon

Method
 

  1. In a spacious bowl, mix together the rolled oats, almond butter, maple syrup, and almond extract until the mixture is smooth and cohesive.
  2. Incorporate the vanilla protein powder, cinnamon, dark chocolate chunks, crushed pecans, and cocoa nibs (if desired) into the bowl. Stir thoroughly until everything is well blended.
  3. Allow the mixture to rest in the refrigerator for about 20 minutes to make it easier to handle.
  4. After chilling, take small portions of the mixture and roll them into bite-sized balls, roughly 1 inch in diameter.
  5. Arrange the formed bites on a plate or tray lined with wax paper and let them chill in the refrigerator for an additional 20 minutes to firm up.
  6. Keep the energy bites stored in a sealed container in the fridge, where they will stay fresh for up to a week.
