Method
 

Preparation
  1. Dice the beef chuck into 1-inch cubes, and chop the onions, garlic, and carrots into small pieces.
  2. In a heavy pot, heat olive oil over medium heat, sauté onions and garlic until translucent.
  3. Add the diced beef and brown on all sides for 8-10 minutes.
  4. Stir in spices, carrots, and tomatoes, mixing well for 2-3 minutes.
  5. Pour in the broth and bring to a boil, then reduce to low and simmer.
  6. Cover and let simmer for 2 hours, stirring occasionally.
  7. In the last 30 minutes of cooking, stir in the dried fruits.
  8. Check beef tenderness, serve with couscous or crusty bread.
