  • 1 teaspoon dried oregano fresh is a great alternative
  • 1 leaf bay leaf remove before serving
  • salt and pepper to taste

Step-by-Step Instructions for Carne Guisada
  1. In a large pot or Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
  2. Add 2 pounds of beef chuck and brown on all sides for about 5-7 minutes.
  3. Mix in 1 chopped onion and 4 minced garlic cloves, sautéing until translucent, about 3-4 minutes.
  4. Add 2 cups of chopped tomatoes and cook until softened, about 3 minutes.
  5. Sprinkle in 1 tablespoon of ground cumin, 1 tablespoon of chili powder, 1 tablespoon of paprika, and 1 teaspoon of oregano, along with salt and pepper.
  6. Pour in 4 cups of beef broth and 1 cup of water, scraping the bottom of the pot.
  7. Incorporate 1 bay leaf into the mixture, stirring gently.
  8. Bring to a boil, then reduce heat to low, and let it simmer.
  9. Cover and simmer for 1.5 to 2 hours, stirring occasionally.
  10. If using, stir in 1 cup of chopped bell peppers and 1 cup of sliced carrots about 30 minutes before the end.
  11. Taste and adjust seasoning, removing bay leaf before serving.
