Preparation Steps
- Preheat your oven to 325°F (165°C) and line a large sheet pan with parchment paper.
- Arrange strips of bacon evenly on the prepared sheet pan and bake for about 15 minutes until crispy.
- While the bacon is baking, cook the sausage patties in a skillet over medium-high heat for 3-4 minutes per side.
- In a large mixing bowl, crack the eggs and whisk with milk, salt, and pepper. Pour into a parchment-lined baking sheet.
- Bake egg mixture for 30 minutes until set and light golden, then cool and cut into 12 portions.
- Split each English muffin and butter each side, toasting them on a griddle until golden brown.
- Assemble each sandwich with a portion of baked egg, bacon or sausage, and cheese.
- Wrap each sandwich in parchment or plastic wrap and store in a large freezer bag.
- When ready to eat, reheat in the microwave for 1-2 minutes or in the oven at 350°F for 15 minutes.
