  2. Cover the seasoned lamb chops with plastic wrap and refrigerate for at least 1 hour to enhance flavor.
  3. Position an oven rack about 4-6 inches from the broiler element and preheat your broiler to high. Prepare a baking sheet lined with aluminum foil.
  4. Place the lamb chops on the prepared baking sheet, spacing them evenly. Broil for 5-8 minutes on each side, checking doneness with a meat thermometer.
  5. Allow the chops to rest for about 5 minutes before serving. Garnish with mint jelly if desired.
