  • 1/2 cup Sweet Chili Sauce Main glaze component
  • 2 tablespoons Soy Sauce Use tamari for gluten-free
  • 3 cloves Garlic Freshly minced
  • 2 tablespoons Rice Vinegar Can substitute apple cider vinegar
  • 2 tablespoons Fresh Lime Juice Use bottled if fresh is unavailable
  • 1 teaspoon Ginger Freshly grated
  • 1 teaspoon Sesame Oil Optional for depth of flavor
For Seasoning
  • 1 teaspoon Fine Sea Salt Adjust according to taste
  • 1/2 teaspoon Black Pepper Freshly cracked
For Searing
  • 1 tablespoon Neutral Oil Vegetable or canola oil
  • 1 tablespoon Cornstarch For thickening if needed
For Garnish
  • 2 stalks Sliced Green Onions Can substitute with chives
  • 1 tablespoon Toasted Sesame Seeds Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Pat the chicken thighs dry and season with salt and pepper.
  2. In a large oven-safe skillet, heat oil and sear chicken thighs skin-side down for 6-8 minutes until golden brown.
  3. Make the glaze by combining all glaze ingredients in a saucepan over medium heat. Simmer for 2-3 minutes until slightly thickened.
  4. Coat the seared chicken thighs with most of the glaze and set aside a third of it.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes, drizzle with reserved glaze, and garnish with green onions and sesame seeds.
  7. Serve hot with your favorite sides like jasmine rice or stir-fried veggies.
