- Preheat your oven to 250°F (120°C) and prepare a large rimmed baking sheet lined with parchment paper.
- In a large heatproof bowl, combine 8-9 cups of Chex cereal with 1 1/2 cups of your chosen nuts.
- In a medium saucepan, melt 1 cup of unsalted butter with 1 1/2 cups of brown sugar and 1/2 cup of light corn syrup over medium-high heat for 5 minutes.
- Remove from heat and whisk in 1 tsp of vanilla extract, 1/2 tsp of fine salt, and 1 tsp of baking soda.
- Quickly pour the toffee over the warmed Chex cereal and nuts, and fold gently.
- Spread the toffee-coated mixture on the baking sheet and bake for 45-60 minutes, stirring every 15 minutes.
