- In a small saucepan, pour in the apple cider and simmer over medium heat for about 15–20 minutes until it reduces to roughly ½ cup.
- In a large mixing bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, sour cream, vanilla extract, and cooled reduced cider until smooth.
- In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gently fold the dry mixture into the wet ingredients using a spatula until just combined.
- Grease a 9x5-inch loaf pan and pour the batter, spreading it evenly.
