- Begin by rinsing 1 cup of quinoa under cold running water. In a saucepan, combine the rinsed quinoa with 2 cups of water and a pinch of salt. Bring to a boil and then simmer for about 15 minutes until fluffy.
- While the quinoa is cooking, peel and chop 2 sweet apples. In a skillet, heat 1 tablespoon of oil over medium heat. Add the apples and sauté for 5-7 minutes until soft and caramelized. Add 1 teaspoon of cinnamon during the last minute.
- In serving glasses, layer quinoa at the bottom, followed by the sautéed apples, and then add spoonfuls of yogurt.
- Sprinkle a handful of nuts on top for added crunch, and dust with extra cinnamon if desired.
- Serve immediately or store components separately in the fridge for up to three days.
