- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil.
- In a large mixing bowl, combine shredded chicken, softened cream cheese, cheddar cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper. Mix until creamy.
- Take a tortilla and spread 2-3 tablespoons of filling along one edge. Roll tightly and place seam-side down on the baking sheet.
- Lightly spray the tops with cooking spray or brush with olive oil. Bake for 15-18 minutes until golden brown and crispy.
- Allow to cool for a few minutes before serving with sour cream, guacamole, or salsa.
