- Preheat your oven to 400°F (200°C). Gather all your ingredients and muffin tin.
- Spray a muffin tin with nonstick cooking spray and place a slice of ham in each cup.
- Spoon shredded cheese into each muffin cup over the ham.
- Whisk eggs with salt and pepper until frothy, then pour into muffin cups, filling about ¾ full.
- Heat olive oil in a skillet, sauté vegetables for 3–4 minutes until tender.
- Distribute sautéed vegetables on top of the egg mixture in each muffin cup.
- Bake for approximately 15 minutes or until eggs are set and tops are lightly golden.
