- Thaw puff pastry according to package instructions and preheat oven to 400°F (200°C). Grease ramekins with unsalted butter.
- Roll out thawed pastry on a floured surface to about 1/8 inch thick. Cut circles for ramekins and press into them.
- Line pastry with parchment and fill with pie weights. Bake for 12-15 minutes until golden; then remove weights and bake for 3-5 more minutes.
- In a skillet, heat butter and sauté shallots and garlic until fragrant. Add spinach and cook until wilted. Stir in cream, parmesan, and nutmeg; season to taste.
- Fill each pastry shell with spinach mixture, leaving room for an egg on top. Crack an egg into each shell and season.
- Brush pastry edges with a beaten egg and return to oven. Bake for 12-18 minutes, depending on desired yolk doneness.
- Cool briefly, garnish with herbs, and serve immediately.
