Method
 

Step-by-Step Instructions
  1. Thaw puff pastry according to package instructions and preheat oven to 400°F (200°C). Grease ramekins with unsalted butter.
  2. Roll out thawed pastry on a floured surface to about 1/8 inch thick. Cut circles for ramekins and press into them.
  3. Line pastry with parchment and fill with pie weights. Bake for 12-15 minutes until golden; then remove weights and bake for 3-5 more minutes.
  4. In a skillet, heat butter and sauté shallots and garlic until fragrant. Add spinach and cook until wilted. Stir in cream, parmesan, and nutmeg; season to taste.
  5. Fill each pastry shell with spinach mixture, leaving room for an egg on top. Crack an egg into each shell and season.
  6. Brush pastry edges with a beaten egg and return to oven. Bake for 12-18 minutes, depending on desired yolk doneness.
  7. Cool briefly, garnish with herbs, and serve immediately.
