Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by greasing it with olive oil or lining it with parchment paper.
  2. In a large mixing bowl, whisk together olive oil, garlic powder, dried oregano, salt, and black pepper.
  3. Slice the zucchini into 1/4-inch rounds and toss them in the seasoning mixture until fully coated.
  4. In a separate bowl, combine mozzarella cheese, Parmesan cheese, and breadcrumbs to create a topping.
  5. Dip each zucchini slice into the cheese-breadcrumb mixture and set aside on a plate.
  6. Arrange coated zucchini slices in a single layer on the prepared baking sheet with space between them.
  7. Bake in the preheated oven for 20 to 25 minutes until cheese is melted and golden brown.
