  3. Slice zucchinis into 1/4-inch rounds and coat in the oil and spice mixture.
  4. In a separate bowl, mix shredded mozzarella, grated Parmesan, and breadcrumbs.
  5. Dip each zucchini slice in the cheese-breadcrumb mixture, coating well.
  6. Arrange coated zucchini in a single layer on the baking sheet.
