- In a small saucepan, add 1 cup of fresh blueberries along with just enough water to cover the bottom. Cook over medium-low heat for about 5 to 10 minutes, stirring occasionally, until the blueberries soften and start to burst.
- Carefully transfer the cooked blueberries to your blender. Add in 3/4 cup of extra virgin olive oil and 1/3 cup of balsamic vinegar. Blend on high for about 30-45 seconds until smooth.
