  • 1 cup fresh blueberries
  • 1 tablespoon fresh thyme leaves plus extra for decoration
  • 2 ounces gin
  • 1 ounce freshly squeezed lemon juice
  • 1 ounce simple syrup equal parts sugar and water
  • Sparkling water
  • Ice cubes

Method
 

  1. Place the fresh blueberries and thyme leaves into a mixing glass.
  2. Use a muddler or the back of a spoon to gently crush the blueberries, releasing their juices and infusing the thyme flavor.
  3. Pour in the gin, lemon juice, and simple syrup.
  4. Add a generous amount of ice to the mixing glass and stir well for about 30 seconds to chill the mixture thoroughly.
  5. Strain the concoction into a tall glass filled with fresh ice.
  6. Carefully pour sparkling water over the top to create a refreshing fizz.
  7. Adorn your drink with a few whole blueberries and a sprig of thyme for a beautiful presentation.
