Step-by-Step Instructions
  1. Sear Chicken: Coat chicken with Cajun seasoning, heat oil in a skillet, add chicken and sear for 5-7 minutes, then flip and cook for another 3-4 minutes before removing from skillet.
  2. Sauté Vegetables: In the same skillet, add diced onion, chopped bell peppers, and minced garlic. Sauté for 4-5 minutes until softened.
  3. Toast Rice: Add uncooked rice to the skillet and stir, cooking for 1 minute until lightly toasted.
  4. Add Broth and Chicken: Pour in chicken broth, bring to simmer, and nestle the seared chicken back into the skillet.
  5. Cook: Cover and reduce heat to low, cook for 20-25 minutes until rice is tender.
  6. Finish: Remove from heat, fluff rice with a fork, garnish with parsley or green onions, and add lemon juice if desired.
