In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix well to combine.
Add the warm water and olive oil to the dry ingredients. Stir until a dough begins to form.
Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 30 minutes, or until doubled in size.
Preheat your oven to 425°F.
Once the dough has risen, punch it down and roll it out into a rectangle about 1/2 inch thick.
Cut the dough into strips, about 1 inch wide. Place the strips on a greased baking sheet.
In a small bowl, mix the melted butter, garlic powder, and dried parsley (if using). Brush the mixture over the dough strips.
Sprinkle the mozzarella and Parmesan cheese evenly over the breadsticks.
Bake in the preheated oven for 12-15 minutes, or until golden brown and the cheese is bubbly.
Remove from the oven and let cool slightly before serving.
