Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Scrub and thinly slice the Yukon Gold potatoes into 1/8-inch rounds.
  3. Melt 4 tablespoons of butter in a medium saucepan over medium heat. Add diced onion and minced garlic, sautéing until fragrant.
  4. Sprinkle in ¼ cup of all-purpose flour and stir to form a roux. Gradually whisk in 1½ cups of milk and 1 cup of chicken broth, cooking until thickened.
  5. Stir in 1 cup of grated cheddar, 1 cup of grated mozzarella, and ½ cup of grated Parmesan cheese until melted and smooth.
  6. Grease a 9 x 13-inch casserole dish, layer one-third of the sliced potatoes, followed by one-third of the cheese sauce, repeat twice more.
  7. Cover with foil and bake for 30 minutes, then uncover and bake for another 35-45 minutes until golden and fork-tender.
  8. Let cool for about 10 minutes before serving.
