Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease two baking dishes with nonstick spray.
  2. Brown the ground beef or Italian sausage in a large skillet for 5–7 minutes, then add diced tomatoes, tomato paste, and dried basil. Simmer for 30 minutes.
  3. Cook the lasagna noodles according to package instructions, about 8–10 minutes, then drain and cool on a kitchen towel.
  4. Mix ricotta, Parmesan, eggs, parsley, salt, and pepper in a bowl until smooth to make the filling.
  5. Spread meat sauce in baking dishes, layer ricotta mixture on noodles, roll tightly, and place seam-side down.
  6. Top with remaining meat sauce and mozzarella, then bake for 25–30 minutes until cheese is golden brown.
  7. Let rest for 5–10 minutes before serving to help them set.
