- Mash the ripe avocado with lime juice, salt, and pepper in a medium bowl. Add cilantro if using and set aside.
- Butter one side of each slice of sourdough bread.
- On the non-buttered side of two slices, layer half a cup of shredded chicken, avocado spread, and cheddar cheese. Top with another slice of bread, unbuttered side down, and butter the outside.
- Heat the skillet over medium heat and grill the sandwich for about 3-4 minutes, pressing down gently, then flip and grill the other side.
- Remove from skillet once both sides are golden brown and cheese is melted. Slice in half and serve.
