  • 1 tablespoon Fresh Cilantro (optional) Chopped for added flavor.
  • Salt and Pepper To taste.
  • 1 cup Cheddar Cheese Shredded or sliced; pepper jack can be used for a kick.
  • 4 slices Sourdough Bread Also can use ciabatta or multigrain bread.
  • 2 tablespoons Butter For toasting the bread; olive oil can be substituted.

Step‑by‑Step Instructions
  1. Mash the ripe avocado with lime juice, salt, and pepper in a medium bowl. Add cilantro if using and set aside.
  2. Butter one side of each slice of sourdough bread.
  3. On the non-buttered side of two slices, layer half a cup of shredded chicken, avocado spread, and cheddar cheese. Top with another slice of bread, unbuttered side down, and butter the outside.
  4. Heat the skillet over medium heat and grill the sandwich for about 3-4 minutes, pressing down gently, then flip and grill the other side.
  5. Remove from skillet once both sides are golden brown and cheese is melted. Slice in half and serve.
