Ingredients
  

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 jar 24 ounces marinara sauce
  • 1 cup shredded mozzarella cheese

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, pepper, oregano, and basil. Mix until just combined; do not overmix.
  3. Using your hands, form the mixture into meatballs about 1.5 inches in diameter and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 20 minutes or until they are cooked through and golden brown.
  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  6. Once the meatballs are done, carefully transfer them to the saucepan with the marinara sauce. Stir gently to coat the meatballs in the sauce.
  7. Sprinkle the shredded mozzarella cheese over the meatballs and cover the saucepan. Allow the cheese to melt for about 5 minutes.
  8. Serve the chicken Parmesan meatballs warm, garnished with additional parsley if desired.
