  • 100 g Feta Cheese crumbled
  • 1/4 medium Red Onion thinly sliced
  • 1/4 cup Fresh Parsley chopped
  • 2 tablespoons Fresh Mint optional, chopped
For the Dressing
  • 1/4 cup Olive Oil extra virgin recommended
  • 1 medium Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper for seasoning

Preparation Steps
  1. Begin by opening the can of chickpeas. Drain them thoroughly and rinse under cold water for about 30 seconds.
  2. In a large mixing bowl, combine the dried chickpeas with diced avocado, crumbled feta, thinly sliced red onion, and chopped fresh parsley and mint. Gently toss these ingredients together for about 1 minute.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper to taste.
  4. Drizzle the dressing over the salad mixture in the large bowl and gently toss everything together for about 30 seconds.
  5. Transfer the salad to a serving dish or individual bowls and enjoy immediately or chill in the refrigerator for about 15-30 minutes.
