Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup pitted cherries fresh or frozen
  • 1/2 cup brown sugar
  • 1/4 cup water

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a medium bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. In a separate large bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  5. In the prepared cake pan, sprinkle the brown sugar evenly across the bottom. Pour the water over the brown sugar. Arrange the pitted cherries on top of the brown sugar mixture.
  6. Pour the cake batter over the cherries, spreading it evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then carefully invert it onto a serving plate. Let it cool completely before slicing.
