- Preheat your oven to 325°F (165°C) and grease a mini loaf pan.
- Combine 2 cups of flour, 1 tablespoon of baking powder, 1 teaspoon of baking soda, 2 teaspoons of cinnamon, ½ teaspoon of nutmeg, and ½ teaspoon of salt in a bowl; whisk together.
- Cream together ½ cup of softened butter and 1 cup of sugar until light and fluffy. Mix in 2 eggs one at a time, followed by 1 teaspoon of vanilla extract.
- Fold in 1 cup of mashed sweet potatoes until fully incorporated.
