Ingredients
  

  • 2 ripe bananas mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/3 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/4 cup chopped walnuts or pecans optional
  • 1/4 cup powdered sugar for glaze
  • 1 tablespoon milk for glaze

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix until smooth.
  3. Add the egg and vanilla extract to the banana mixture, stirring until well combined.
  4. In a separate bowl, whisk together the baking soda, salt, and flour. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix.
  5. In a small bowl, mix the ground cinnamon and chopped nuts (if using) together.
  6. Pour half of the banana bread batter into the prepared loaf pan. Sprinkle half of the cinnamon-nut mixture over the batter. Pour the remaining batter on top and finish with the rest of the cinnamon-nut mixture.
  7. Use a knife to gently swirl the cinnamon mixture into the batter for a marbled effect.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. For the glaze, whisk together the powdered sugar and milk until smooth. Drizzle over the cooled banana bread rolls before serving.
