Begin by frying the bacon in a pan over medium heat until it reaches a perfect crispness, about 6-8 minutes. Once done, place the bacon on a plate lined with paper towels to absorb excess grease.
While the bacon is sizzling, toast the bread until it’s golden and has a lovely crunch.
Generously spread mayonnaise on one side of each toasted slice.
On two of the slices, layer a handful of fresh spinach, followed by the tomato slices. Sprinkle with a pinch of salt and a dash of black pepper to enhance the flavors.
Pile the crispy bacon on top of the tomatoes, allowing the warmth to slightly wilt the spinach.
Cap the sandwich with the remaining slices of bread, mayonnaise side facing down.
