Step-by-Step Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef and cook for 5-7 minutes, breaking it apart until browned. Season with salt, black pepper, garlic powder, onion powder, oregano, and red pepper flakes.
- Pour in 2 cups of marinara sauce and 1 cup of beef broth, stirring well. Bring to a gentle boil for 2-3 minutes.
- Add in 8 ounces of mafalda pasta, ensuring it's fully submerged. Cover the pot to trap steam.
- Cover and reduce heat to medium-low, simmer for 15-20 minutes, stirring every 3-4 minutes.
- Once the pasta is tender, turn off the heat and stir in 1/2 cup of grated Parmesan cheese and 1 cup of shredded mozzarella cheese until melted. Let it sit covered for 2-3 minutes.
- Spoon into bowls, garnishing with freshly chopped parsley. Serve warm.

Notes
To prevent pasta sticking, stir often during simmering. Turn off heat before adding cheese for a smooth topping. Adjust sauce thickness with more beef broth if necessary.
