  • 1 cup pumpkin puree homemade for extra flavor
  • 3/4 cup brown sugar can substitute with granulated sugar
  • 1 teaspoon cinnamon adjust to taste
  • 1/2 teaspoon nutmeg start with a pinch
  • 1/4 teaspoon clove use sparingly
  • 2 large eggs substitute with flax egg for vegan option
  • 1 cup cream can replace with coconut cream
  • 1 pinch salt sea salt recommended
Crust
  • 1 package ready-made pie crust or homemade for a flakier texture
  • Homemade Pie Crust optional

Method
 

Prepare the Crust
  1. Preheat your oven to 400°F (200°C). Roll out your ready-made pie crust and fit it into a 9-inch pie dish. Prick the bottom with a fork and bake for 10–12 minutes until lightly golden.
Make the Filling
  1. In a large mixing bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, clove, and a pinch of salt. Whisk until smooth.
Add Eggs and Cream
  1. Crack in the eggs and pour in the cream, whisking until creamy and well blended.
Combine & Pour
  1. Pour the filling into the pre-baked pie crust and spread it evenly.
Bake
  1. Lower the oven temperature to 350°F (175°C) and bake for 40–50 minutes until the filling is set and a toothpick comes out clean.
Cool
  1. Remove the pie from the oven and let it cool at room temperature for at least 2 hours.
