Ingredients
  

  • 1 cup cottage cheese
  • 1 cup fresh raspberries plus extra for garnish
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 1/4 cup heavy cream
  • 1 tablespoon powdered sugar optional

Method
 

  1. In a blender or food processor, combine the cottage cheese, raspberries, honey (or maple syrup), vanilla extract, and lemon juice. Blend until smooth and creamy.
  2. In a separate bowl, whip the heavy cream with powdered sugar (if using) until soft peaks form.
  3. Gently fold the whipped cream into the raspberry cottage cheese mixture until fully combined.
  4. Spoon the mousse into serving dishes or glasses and refrigerate for at least 1 hour to chill and set.
  5. Before serving, garnish with additional fresh raspberries on top.
